Instructions
- Blanch the corn kernels and carrot cubes for 1 minute, then drain and set aside
- Heat a pan with cool oil, add the carrot cubes and stir-fry briefly, then add the corn kernels and stir-fry
- Add white sugar and salt, and stir to combine
- Mix water and cornstarch to make a slurry, pour it into the pan, and stir-fry quickly until the sauce thickens slightly
- Add the roasted pine nut kernels and stir-fry evenly
- Remove from heat and plate
